The Bretzel Bakery is a well-known, industrial-sized sourdough bakery in Dublin. The bread is sold in their bakeries, markets, other companies and restaurants. The owner of the bakery was inspired by the recipes of Upprinting Food and wanted to reduce the bread waste in the bakery. Even the breadcrumbs resulting from slicing the bread for their customers is an enormous waste stream. In collaboration with the bakery, recipes based on old bread for cookies and crackers with a long shelf-life were developed. This project is still in development, the recipes will be further improved to increase the percentage of breadcrumbs and to research the form-giving possibilities for large-scale production.
